This month we welcome our Sous Chef, Paul, back to the blog as he describes his perfect summer BBQ menu and new summer delights at The Regent.

'As June and July come around everyone starts to plan activities outside, and there is nothing better than al fresco dining! It's always best to source and buy local meat (we always make sure to use local meat, when we can, at The Regent) and burgers and sausages are BBQ staples. I always like to make up chicken skewers with lot's of peppers and onions.
My other BBQ essentials are:
Waldorf salad - A really yummy salad, full of delicious fruit and nuts
Potato salad - I like to make this with a vinigrette instead of mayonaise as it's much healthier
Coleslaw - Made with red cabbage to make it nice and colourful!
Tomato wedges with coriander - Fragrant and juicy!
Cucumber batons - With a nice yogurt and mint dip
5 Mix leaf salad - You can add beans or pulses to this for an extra something
Pasta salad - With red onion, pepper and peas

If you don't feel like having your own BBQ you could always come and dine al fresco at The Regent, we've got lots of outside seating, and I throughly recommend the feather blade of beef, with garlic, wild mushrooms and mash! For something a little more summery you could go for our salmon and strawberries two course lunch - delicious!'
